When looking at sushi ingredients, what dominates most pieces of sushi is the rice. Many specialities comprise mainly of rice, but a number of other additions add new sensations to the palate.

Seaweed, also known as nori in sushi circles, is often used in a variety of oriental dishes. It can be included in stir-fries, salads or soups, such as miso soup, which can be enjoyed with sushi. Seaweed is farmed in the oceans near Japan. It takes about 45 days from the planting to the first harvest.

Japanese nori is divided into different standards of excellence. The finest and most expensive is cultivated near Ariake Bay off the Japanese island of Kyushu. The most economical type of nori originates from China. Since seaweed attracts and absorbs moisture, keep a desiccant with the sheets you do not use immediately. Seaweed is nutritious, being rich in fibre and virtually fat free. It is a source of vitamins A, B complex and C and also of minerals such as magnesium, zinc, iodine and potassium.

Certain vegetables work quite well in sushi, blending beautifully with the flavor of the rice. Other combinations may prove less successful. tomato, for example, is not firm enough to be of any use. Carrots and asparagus have been incorporated with good results. The best choices are those vegetables that stay firm. Pickled variants can contribute to the general taste sensation. Cucumber is probably one of the most popular vegetarian ingredients. Another surprise sometimes encountered in a bite of sushi, is umeboshi, or pickled plum.

Through the fusion of western styles of sushi, the use of avocado became fairly widespread. It is more economical to use during its natural season and the species of avocado characterized by black skin compliments the sushi best. Those who regularly incorporate it, suggest slicing the fruit in half and taking out the pit. While still supported by the thick skin, it can be cut into lengthwise strips.

cucumbers make a very popular inclusion into sushi, since their refreshing taste combines very well with the vinegared rice. If you cannot get hold of Japanese cucumbers, try the English variety, which makes a great substitute. When buying, you should select the firmest specimen. Take care that the refrigeration is not very cold or your cucumber may end up too watery for use. Browsing on the internet, you may discover various ways of cutting cucumber for sushi. One person advises that you should first slice the cucumber into two lengthwise halves and then cut out the core and its seeds. Another suggests matching the length of the cucumber pieces to that of your nori sheets. Ideally, your end result will be thin straws of cucumber that can easily be added to the center of the roll. If you are a novice at sushi, you may consider practicing the knife work first.
