Tasty Cucumber sandwich recipe?
I'm craving a cucumber sandwich at the moment and I was wondering if anyone has a tasty cucumber sandwich recipe. I hate the taste of mayonnaise, so if your recipe does include mayo please only post it if the taste of mayo isn't evident. But, I would rather if mayo wasn't in the recipe. Thank you ;]
This is my aunt's recipe -- I think she got it out of Southern Living. It does have a bit of mayo in it, but you can't taste it.
Cucumber Sandwiches
1 large cucumber, peeled, seeded and grated
8 ounces cream cheese, softened
1 tablespoon mayonnaise
1 small shallot, minced
¼ teaspoon seasoned salt
¼ teaspoon onion powder
1 loaf white sandwich bread
sliced cucumber, for garnish
Drain cucumber well, press between sheets of paper towels.
Stir together cucumber and next 5 ingredients. Spread mixture evenly over half of the bread slices. Top with remaining half bread slices.
Trim crusts from sandwiches. Cut in half diagonally. Garnish if desired. Store sandwiches in airtight container. Keep refrigerated.
